Fried Cabbage Pancakes and Onion Sauce
Zambia is a landlocked African country and has one of the highest levels of urbanization in Africa with densely populated areas in the central zones particularly around the cities of Lusaka, Ndola, Kitwe, and Mufulira. With space at a premium in the cities, besides corn and beans, cabbage has many simple recipes in the everyday lives of Zambians.
Ingredients.
1 can black eyed peas washed and drained.
2 cups cooked shredded cabbage.
1 cup all-purpose flour.
1 large egg.
1/4 cup finely chopped onion.
1/2 magi cube.
Vegetable oil for frying.
Directions.
Mix all ingredients well, roll into small size balls, flatten and fry on both sides until golden brown. Drain on paper towels, cool and sprinkle with a little salt if desired. Serve warm with our onion sauce recipe below.

Ingredients.
2 tablespoons vegetable oil.
4 cups thinly sliced onions.
Salt and pepper to taste.
2 cups vegetable stock.
2 tablespoons vegetable oil.

1 teaspoon all purpose flour
Directions.
In a saucepan, over medium heat, add the oil. When the oil is hot, add onions. Season with salt and pepper. Saute for about 10 to 12 minutes, or until caramelized. Add the flour to the stock, mix well. Add the stock and bring to a boil. Reduce the heat to medium low and simmer for 10 minutes. Remove from the heat and puree until smooth.
